Description
In this particular case, the product was meat that is enormously demanding of precise temperature control throughout the process. The temperature of the meat increases due to the processing and needs to be cooled back to approx. 0˚C as soon as possible. With the Waukesha Cherry-Burrell scraped surface heat exchangers (depicted installation), up to 10 tons of meat can be cooled per hour using direct CO2, freon or ammonia, without coming into contact with the meat. Cooling with ice water, brain or glycol is also among the possibilities.
